Recipe for Caribbean Fried Chicken


This delicious recipe was inspired by many people and places. Chef Ex in St.Lucia using delicious ingredients like Tamarind and local ginger and turmeric, childhood enjoyment of seeing my Mum and Aunt from Trinidad making fried chicken and the numerous Chicken Shops in the UK open day and night feeding hungry revellers with tasty Chicken and Chips.

@eebellskitchen wanted to share with our friends and customers in St.Lucia locally sourced, home-made, very tasty Chicken, Fries and Salad. Here’s a video showing the first stages of preparation, washing the Chicken with lots of lemon & then adding our Secret BBQ Chilli Sauce.

We hold some recipes secret, this is one of them, but you can definitely use the recipe that I am going to share as a foundation for a great tasting, soul-food brimming piece of fried chicken as it is rooted in caribbean tradition and heritage - My Trini Mum :-)

Firstly, wash your chicken well with lots of citrus, lemon or limes work equally well. 

 

Next, season your chicken, use lots of thyme, ginger, garlic, salt and pepper, to your taste. Marinade for as long as you can, overnight is good but an hour or so also works.

 

You’ll need the following:

 

Tomato Ketchup

Tomato Puree

A small glass of Rum or Dry Sherry, my Mum always used Sherry - delicious

Fresh Chilli - thinly Sliced

Dried Chilli Flakes

Brown Sugar or Maple Syrup, honey works as well

Sliced White Onions



How much of the above you need depends on the quantity that you are making. I’ve seen Mum use a few tablespoons of Ketchup to half a bottle or more depending on how many she was feeding.

 

The rest of the ingredients are really to taste & if you have some fresh pineapple to hand adding in a few pieces adds to the splendour of the BBQ Chilli Marinade. 

 

Cover your pieces of chicken with this delicious, Spicy Marinade.

 

To crisp up your chicken when you are cooking it, cover with flavoured flour coating. To flavour the flour add again, to taste, Turmeric, Paprika, Chilli Flakes, Salt and Pepper to taste. 

 

When coating your chicken with the flavoured coating make sure that you really mix everything well, pack in the coating to the chicken,

 

To your taste / diet, deep fry, Air fry or Bake & enjoy Crispy, tasty,
