How to make a St.Lucian take on delicious finger food : Delicious Fresh Tuna Fish Fingers

Fancy a tasty and quick way to make some delicious finger food? This is our recipe, from eebelle's Kitchen, New Dock Road, St.Lucia, West Indies, made by Chef Ex. Luckily we are in St.Lucia so bought fresh Tuna caught early in the morning from the Caribbean Sea and then cooked a few hours later by Chef Ex.

How to make these delicious bites of fish? 

 

 

Cut your fish into finger sized bites and lightly season with Sea Salt, Pepper, Garlic and a little Paprika. Roll in some flour, we used brown flour to add a little nutty flavour. Once lightly covered in flour, dip in an egg wash and then roll in crushed crackers to add texture. Season your crackers with some fresh herbs to add extra flavour.

 

Take your lovely fingers of fish to some oil and fry on a medium heat for about 2 minutes on each side, until your fingers of fish are nice and brown, for a little bit of indulgence add some butter towards the end of the cooking time to the pan. Take out of the pan and enjoy delicious fresh Fish Fingers, cooked from scratch in about 20 minutes.
